🌿 SIMPLE TOMATO + BASIL PASTA

💚 This dinner inspo is brought to you by my garden - because I have basil and cherry tomato’s GALORE that I gotta start usin up!

🍝 But first, excuse me while I rave about my favourite noodles! These black bean noodles by @explorecuisine are where it’s at - ingredients are 100% ORGANIC BLACK BEAN NOODLES - nothin else added!! With 22gr of protein PER SERVING you really can’t go wrong 👌🏼 and the company + their practices are pretty badass as well 🙏🏼

INGREDIENTS
🍅 6 Chicken Thighs (or prawns)
🌿 2 cups Cherry Tomatoes
🍅 1/3 cup White Wine
🌿 3 tbsp+ Avocado Oil
🍅 Pasta of choice (or zoodles)
🌿 1 tbsp Butter
🍅 1/4 tsp Chilli Flakes
🌿 4 cloves Garlic, minced
🍅 1 cup Parmesan Cheese
🌿 1 cup Basil
🍅 S+P to taste

1️⃣ CHICKEN: Preheat oven to 350. Toss chicken in some avocado oil and S+P. Heat cast iron pan to medium heat and sear chicken for 3min/side. Put entire dish into oven and cook for 15-20min.
.
2️⃣ PASTA: Cook pasta according to package, strain and coat in butter. Set aside.
.
3️⃣ SAUCE: Heat a large sauce pan over medium heat with 3tbsp avocado oil. Add garlic, chilli flakes, a splash or two of wine + tomatoes. Once the tomatoes start to burst, deglaze pan with wine and add S+P. Stir until alcohol cooks off (about 3min).

4️⃣ COMBINE: Toss pasta, sauce, parmesan and basil together in a large bowl, saving some parmesan + basil for serving.
.
5️⃣ SERVING: Serve pasta on plate and add sliced chicken. Top with basil, parmesan and S+P.

👩🏼🍳 This recipe is gluten free and can easily be made vegetarian by omitting the protein. It can also be made keto/paleo friendly by replacing the black bean noodles with zoodles 🙏🏼 Enjoy!

🤷🏼♀️ WHY DO WE NEED IT
Vitamin C is NOT made by the body but is essential for many body functions including the production of Collagen (see yesterdays post on this❗️), iron absorption (hellooo ladies!), the immune system (hence it being great for flu season!), wound healing (SO important after any major injuries) + the maintenance of cartilage, bones and teeth. 😬

💦 WATER SOLUBLE
The body uses Vitamin C so fast that it is used up within 2hrs & cleared from the blood within 3-4hrs. HOWEVER, when the body is under stress (physical, mental, emotional..) it is used up far faster - sometimes as fast as 1HR! (grrrreat..) 🤦🏼♀️

⏰ WHEN TO TAKE IT
Because it's used by the body SO quickly, when recovering from a major injury, handling chronic stress, or showing flu symptoms, it's important to be consuming Vitamin C on an hourly basis. For regular maintenance + conditioning, break up your daily dosage into 3 doses throughout the day.

💊 HOW MUCH TO TAKE
Most people are not consuming enough daily Vitamin C - primarily because the levels of vitamin C in our foods have dropped drastically over the years due to pollution, toxic chemicals and so forth. When supplementing, you’re taking it to bowel tolerance—yes that’s exactly how it sounds! 💩

🤓 At this level, Vitamin C works very much like an Antibiotic, Antihistamine, Antitoxin, Antipyretic, Antidepressant and will even curb your appetite! (check out Dr. Andrew Saul for more info on this). Start with 500mg and slowly work your way up! Your daily dosage will change based on the amount of stress your body is under.

🧐 TBH, I had a hard time wrapping my head around using collagen. I KNEW how beneficial it could be for my body, but I still was a bit creeped out by it 🤷🏼♀️

👵🏼 As we age, our bodies will naturally slow down the production of collagen which is why our tissues will have less elasticity (wrinkles), increased joint problems + issues such as osteoarthritis. 💀

🏃🏼♀️ I consider myself to be a pretty physically active person. I rotate my daily exercise schedule between weight training, yoga, outdoor activities + swimming. I rotate between these to not cause strain on any one muscle while also getting a fully body workout.

🔥 Lately, I've noticed a lot more tension/inflammation in my joints + I'm not recovering as fast as I once was. SO here I am, trying out collagen to see how it goes and I'm actually shocked at how fast I've noticed a difference!

🤓 WHAT YOU NEED TO KNOW
There are 3 types of collagen found in the body, each composed of different amino acids. In order to consume collagen, it must be broken down by being hydrolyzed (most supplement forms), by making gelatin, or by making bone broth.

🐮 BOVINE COLLAGEN
Beef collagen will contain types 1 + 2 collagen. It is rich in amino acids (18 to be exact) but does not contain all 9 essential amino acids so it is not considered a complete protein. Some benefits include: supporting joint health, enhancing exercise recovery, and promotes gut health.

🐟 MARINE COLLAGEN
Fish collagen mainly contains type 1 collagen but is considered to be more bioavailable than bovine collagen. Some benefits include: fewer wrinkles, reduces signs of aging, and moisturizes skin.
